Black bean chilli – vegan recipe

🦊 Black and Kidney Bean Chilli 🦊

Serves 4

The most easy simple vegan recipe ever, nice and comforting πŸ™‚ I have followed a low fodmap diet for way over a year and it has really helped my stomach pain and bloating, however I have started to add in a very small amount of beans and other foods to test the water and give me some variety!

Empty a tin of chopped tomatoes in to a pan, add 100g of carrot, 1 tin of black eyed peas and 1 tin of kidney beans and some spices such as chilli, basil, dill, turmeric and paprika. Boil for 10 – 15 minutes, I cooked 2 x linda mccartney sausages, chopped them up and added them the last 5 minutes and I also boiled a little bit of buckwheat pasta for extra protein πŸ™‚ Of course covered in Nutritional yeast!

Per serving 192 cals, fat 2.2g, carbs 25.2g and protein 13.5g
