Creamy spinach curry with tofu “paneer” recipe

🦊Creamy Spinach Curry with Tofu Paneer🦊

Eating healthy and plant based 🌱doesn’t need to be hard! I made this in around 20 minutes and have enough for tomorrow too!

Serves 2✌🏼

Add a tin of chopped tomatoes to a pan and add in 1 tsp of curry powder, 1 tsp of cumin, turmeric, coriander and half a tsp of cayenne pepper and ginger. Stir in 100g of spinach, 100ml of @kokodairyfree light coconut milk and bring to the boil. Simmer for a few mins and add in a block of @tofooco tofu cut into chunks! Simmer for ten minutes and then add a squeeze of lime juice 🥰

Macros are for the curry only but I served mine with auinoa stirred through for extra protein but it would be great with rice, couscous or extra veg too! You could even throw in some chickpeas!

I topped mine with a few seeds @mrfilberts for added crunch and some Nooch! @marigoldengevita

Also how hard is it to weigh things out in a bloody coconut bowl 🤣
